    Don't you just LOVE summer? I do. One of the main reasons I love summer so much is because it's GRILLING SEASON! Grillng can be as easy or as difficult as you want to make it, and it's a delicious and healthy way to cook. Just remember to be safe while you're grilling: keep small children and animals away from the grill, remember to turn off and detach propane canisters from the grill when through, and dispose of any coals responsibly after they are fully extinguished and cooled.

    Now - on to the recipe! It's WAY EASY.


    List of Ingredients


    • Two boneless, skinless chicken breasts
    • 1/4 cup lemon juice
    • 1/4 cup honey
    • 2 tablespoons soy sauce
    • 2 cloves garlic, minced (please use the fresh stuff!)
    • 1 teaspoon curry powder


    Instructions


    1. Place the chicken breasts between plastic wrap or parchment paper and pound lightly with the flat part of a meat mallet. If you don't have one of those, use a small sauce pan or frying pan. Honest, it's fine. I won't tell anyone.
    2. Put the chicken in a big plastic Ziploc bag.
    3. Add all the ingredients in the plastic bag with the chicken. Squoosh out all the air, and seal the bag. In fact, it might not be a bad idea to double-bag it, especially if you use the cheapo, non-Ziploc bags like I do.
    4. Using your hands, gently moosh the ingredients around with the chicken until all the liquid and garlic and stuff is all mixed up and coating the chicken. (Did I not say that this was easy??)
    5. Put the bag with chicken and concoction in the fridge. Let it marinate for about an hour.
    6. Prepare your grill. Get it to about a medium/medium-high heat.
    7. When the chicken's through marinating, go ahead and put it on the grill, probably about fifteen to twenty minutes. Don't forget to flip them about halfway through!
    8. Pour yourself a glass of white wine while you wait.
    9. Plate the chicken and serve it. Yum!
