    BACON-QUICHE BISCUIT CUPS

    List of Ingredients





    1 (8-ounce) package cream cheese, softened
    2 large eggs
    2 tablespoons milk
    1/2 teaspoon salt
    2 ounces Swiss cheese, shredded
    2 tablespoons chopped green onions
    1 (10-ounce) can refrigerated biscuits
    5 bacon slices, cooked, crumbled and divided

    Beat first 4 ingredients at medium speed with an electric mixer until smooth; stir in cheese and onion. Set aside.
    Pat each biscuit into a 5-inch circle; press into lightly greased 3-inch muffin cups. Sprinkle half of bacon evenly into cups. Spoon 2 tablespoons cream cheese mixture into each cup.

    Bake at 375� for 25 minutes or until set. Sprinkle with remaining bacon, gently pressing into filling. Yield: 10 mini-quiches.
