    Blue Cornbread-Tamale Stuffing

    List of Ingredients





    1 pound chorizo
    1 medium-sized yellow onion, diced
    1 diced poblano pepper
    2 diced celery stalks - diced
    2 tablespoons of choppedgarlic, 5 cups blue cornbread croutons
    8 tamales, broken into pieces
    2 tablespoons of chopped cilantro,
    Salt, pepper, cumin, and ancho chili powder to taste
    1 cup strong chicken stock
    1/4 cup olive oil

    Saute chorizo in a large pan. Add onion, poblano pepper, celery and garlic, and saut� until they are light in color. In a bowl, mix croutons and tamale pieces. Add the chorizo, vegetables, cilantro and spices. Stir in the chicken stock and olive oil. Put the stuffing in the cavity of the turkey.
