    Seafood Cornbread Dressing

    9" pan of cornbread
    1/2 cup chopped onions
    3 tablespoons oil
    1/2 cup chopped celery
    1/2 cup chopped parsley
    1/2 cup chopped green onions
    1 cup grated jalapeno cheese
    1 can cream of shrimp soup
    1 cup chopped shrimp
    1 cup oysters, drained
    1 cup crab meat
    salt and pepper to taste

    Directions:
    Prepare cornbread and set aside. In a medium saucepan, brown onions. Add celery, parsley and green onion tops and cook for 5 minutes on medium high heat. Add cream of shrimp soup (diluted with water), shrimp, oysters and crab meat. Season to taste. Bring to a boil on medium heat (about 15 minutes). Crumble cornbread into seafood mixture. Blend well. Add cheese and stir. Pour into casserole sprayed with PAM. Bake at 350 degrees for 15 minutes. Serves 6.
