Jalape�o Chicken With Black Beans and Ri
List of Ingredients
1 cup white rice
2 tablespoons olive oil
4 boneless, skinless seasoned chicken breasts
1 to 2 tablespoons minced jalape�o peppers
3/4 teaspoon ground cumin
1 (15-ounce) can seasoned black beans, rinsed and drained
1/4 cup cilantro leaves
Prepare rice according to package directions. In a large skillet, heat oil and brown chicken until no longer pink. In a medium bowl, toss hot rice with peppers, cumin, beans and cilantro. Add rice-bean mixture to skillet and heat through. Serve chicken atop rice and beans. Makes 4 servings.
