    Ostrich Fillet with Spinach Topping

    8 servings

    8 5 1/2-ounce ostrich fan (boneless thigh) fillets
    1/4 cup parsley
    1 cup fresh spinach
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 teaspoon ground white pepper
    6 ounces feta cheese
    2 tablespoons heavy cream
    juice from 1 fresh lime



    Chop spinach and parsley. Blend in spices and cheese until thoroughly mixed. Add heavy cream and lime juice, blending until smooth. Refrigerate until ready to use. Grill the fillets, slightly undercooking them (rare to medium-rare). Spoon on topping and broil for 2 to 3 minutes in broiler oven.
