    Sausage and Cabbage

    List of Ingredients

    1 cup uncooked rice
    1 pound venison-pork breakfast sausage
    1 large can Spicy Hot V8 juice (or add 2 tablespoons of Tabasco sauce to a large can tomato juice)
    1 head cabbage, cut into small chunks
    � onion, chopped
    Salt and pepper to taste


    Mix rice into sausage. Shape into meatballs about the diameter of a quarter. Pour Spicy Hot V8 into a Dutch oven or heavy pot, and bring to a boil. Add meatballs, cabbage, and onion. Be sure the meatballs are distributed evenly throughout the cabbage to ensure good seasoning. Cover the pot and cook on low heat for 30 minutes, until the meatballs are well done. Season to taste with salt and pepper. Serve with hot buttered corn bread. Makes 4 servings.
