    Ginger Lemon Creme Dessert Muffins

    Yield: 1 dozen muffins


    List of Ingredients


    • 2 cups flour
    • 1 Tbsp. baking powder
    • 1/2 tsp. salt
    • 3/4 cup granulated sugar
    • 1 Tbsp. ground cinnamon
    • 1 egg
    • 1 cup milk
    • 1/4 cup vegetable oil
    • 10 Carr's� Ginger Lemon Creme Cookies, chopped into 1/4 inch pieces
    • Streusel topping:
    • 1 stick butter
    • 1 1/2 cups flour
    • 1 Tbsp. sugar
    • 4 Carr's� Ginger Lemon Creme Cookies, chopped into 1/4 inch pieces
    • Garnish:
    • 12 scoops vanilla ice cream
    • caramel sauce


    Instructions


    1. Preheat oven to 400 degree F.
    2. Combine flour, baking powder, salt, and sugar in a large mixing bowl. In another bowl, combine egg, milk and vegetable oil.
    3. Make a well in the middle of the flour mixture, add the egg mixture and combine. Do not over mix. Fold in the chopped cookies.
    4. Divide batter into greased muffin tin. Top with streusel (for streusel: rub together the butter, flour and sugar until butter is the size of peas, fold in the cookies).
    5. Bake for 20-25 minutes or until done.
    6. Cut muffin in half and add a scoop of vanilla ice cream and drizzle top with caramel sauce.
