    Chewy Granola Bars

    List of Ingredients




    1/2 cup melted Spectrum Natural Shortening
    1/2 cup vegetable oil (they were a bit oily so I may reduce this to 1/4 cup next time since I think the Spectrum gives more oiliness than butter does)
    3/4 cup brown sugar (I might try using all xylitol next time)
    1/2 cup xylitol (original called for regular sugar)
    2 tablespoons honey or maple syrup (I used honey and microwaved it for a few second to make it liquid so it would incorporate better)
    2 cups gluten-free oats (these are hard to come by so you can probably use rice flakes here and quinoa next)
    2 cups quinoa or rice flakes
    1 cup GFCF chocolate chips
    1/3 cup chopped almonds (I used Hemp Seeds)
    1 cup dried fruit (I used raisins and dried cherries)

    Recipe



    1) Preheat oven to 350 degrees. Lightly grease and line a 9x12 jellyrollpan with parchment (I don't use non stick pan so I oiled the sides just in case)

    2) In a large bowl, mix melted butter and oil with sugars and honey.

    3) Spoon mixture into prepared pan and press down evenly, making sure surface is smooth - this is a good place to have any tactile defensive kids help out if you are working on that area :-)

    4) Bake for 30 minutes (pick spot in oven where the heat is most even). Cool slightly and cut into bars.

    5) To make bars crunchy place pan in fridge and it will make getting them out in bars easier, keep in fridge to keep crunchy, room temp if you want them chewy, if they get too hot (left in a car for example :-) then they are really messy because the don't stick together much at all! But in any form they taste really good!
