    GFCF Granola Bars
    4 egg whites or 2 eggs
    3/4 tsp vanilla
    1/4 C sugar or substitute such as honey or maple syrup
    4 tsp oil
    1 tsp cinnamon
    1-2/3 C GFCF granola (Enjoy Life has great ones)
    1 C raisins
    3 TBS rice bran
    3 TBS sunflower seeds
    4 tsp sesame seeds

    Recipe




    Beat eggs and sugar together. Mix in oil, cinnamon, vanilla and remaining ingredients. Bake in a 13x9 pan at 300 degrees for 20-25
    minutes.

    *You can be creative and use other items that your child may like better such as nuts, chips, coconut or cranberries.

    **I like to add 1TBS potato flour for chewiness and 1/4 tsp xanthan gum for holding power! I also add in Ener-G brand Rice Nuts for extra crunch.

    *** These cut and travel well. Wrap in plastic wrap after cut in bar size.
    *****Variations:
    Tropical-add dried apricots, banana chips, coconut, and dried pineapple or sweeten with pineapple juice, and macadamia nuts Peanut Butter-add peanut butter, peanuts and rice nuts Chocolate-add chocolate chips, Nestle Quik Chocolate Drink mix powder or Hershey's Chocolate syrup, and crushed GFCF chocolate cookie pieces Berry-add dried blueberries, strawberries or raspberries, berry jam,
    Nestle Quik Strawberry Drink mix powder or Strawberry syrup and Enjoy Life Berry Blend Granola Smore's-add chocolate chips, mini marshmallow pieces and homemade GFCF graham cracker pieces Fruit & Nut-add golden raisins, dried cranberries, cherries, apricots and/or dried fruit bits and mixture of nuts such as pine nuts, pecan and walnuts
