Gourmet Protein Bars (Stevia) (GF Oats)

    Source of Recipe

    Brenda-Lee Olson

    Recipe Introduction

Original recipe from Thom King of steviva.com
Modified to GF by BL Olson

    List of Ingredients

3 1/2 cups GF oats (like Cream Hill Estates)
1 1/2 cups powdered rice milk (or DariFree but it has sugar)
1/2 cup vanilla rice protein powder
1/8 teaspoon of (White) Stevia Powder
    2 egg whites, beaten
    1/4 cup water
    1 teaspoon vanilla
    1/4 cup unsweetened natural applesauce

    Recipe

Preheat oven to 325 and spray a baking sheet or 9x12 baking dish with non-stick spray. The 9x12 baking dish will yield thicker bars.

Mix oats, powdered rice milk, and protein powder in bowl and blend well.

In separate bowl, combine egg whites, water, applesauce, and the Stevia Powder and blend well.

Stir liquid mixture into dry ingredients until blended. The
consistency will be thick and similar to cookie dough.

Spread batter onto pan and bake until edges are crisp and browned.

Cut into 10 bars and store in airtight container or freeze.

Author's Notes:Why would you buy protein bars, if you knew it had almost the same calories, fat and sugar as many of the popular candy bars? If your goal is to get healthier, slimmer, or replace a meal after a 30 to 60 minute workout, a candy bar or anything like it is probably on your "not" list. Right?

This is a great recipe without all the junk in it but still delivers plenty of protein and amazing flavor.

For some interesting crunch value add sesame, pumpkin, poppy, caraway, sunflower seeds, as well as other organic food items. Mix it up to make a terrific batch of great tasting gourmet protein bars.
