    List of Ingredients




    8 ounce dried figs
    1 C dried dates
    2 C water
    1/4 C oil
    2/3 C brown sugar
    2 TBS dark corn syrup
    2/3 C quinoa flakes
    1-1/2 C brown rice flour
    1 C sorghum flour
    1/4 C dry baking cocoa (I used sweetened)
    3 tsp ground flaxseed
    1 tsp xanthan
    1/2 tsp salt
    1 tsp baking soda
    1/2 C crisp GFCF rice cereal (I used mix of chocolate and plain)
    1/3 C mini GFCF chocolate chips


    Recipe



    Boil figs, dates and 2 cups water in a medium saucepan until water is almost gone and fruit is soft.

    Once cool, puree mixture in blender until soft paste
    is formed.

    Transfer fruit paste to mixer bowl.

    Add oil, brown sugar and corn syrup to mixer and beat together.

    Gradually add quinoa flakes ( I used the instant Hot Chocolate Quinoa Cereal packs for extra cocoa flavor),
    brown rice flour, sorghum flour, cocoa, flaxseed, xanthan, salt and baking soda.

    Once mixture is blended, stir in rice cereal and chocolate chips.

    Pat mixture using brown rice dusted hands into a 13 x 9 x 2 inch glass baking pan that has been lined with parchment or greased foil.

    Bake at 325 degrees for 20 minutes or until a toothpick inserted into the center comes out clean.

    Cool completely in refrigerator.

    Cut into serving size bars.

    Yield: 16 ( 4-1/2 " x 1-1/4" bars)
