    6 skinless chicken leg quarters or breasts
    20 oz. jar salsa
    1 red pepper, finely chopped
    2 T. cumin
    2 T. lemon juice
    2 T. chili powder
    3 cloves garlic, crushed
    2-15 ounce cans black beans, drained and rinsed

    Recipe



    1. Preheat oven to 400. Arrange chicken pieces in 9x13 pan. Combine all ingredients and pour over chicken.

    2. Cover and bake for 1-1 � hrs.

    *15 oz. can beans = 2 c. cooked = 2/3 c. dry
