    1 large package of 10 to 12 or 2 small packages of 5-6 pieces of chicken
    1/4 cup light olive oil

    Batter - mix together in a large plastic bag
    3/4 cup Brown Rice Flour
    1/4 cup Tapioca Flour (to help with browning)
    3 tsp. Salt
    1 tsp. Pepper
    1 tsp. Paprika

    Preheat oven to 375 degrees.

    Put the light olive oil in a 9x15 or similar baking pan and be sure it spreads across the bottom of the pan. Put the thawed chicken in the pan and roll in the oil. If you want the skin removed, do that before rolling in the oil. I usually use a safe non-stick spray first (it makes it easier to clean the pan afterwards).

    Mix the batter ingredients together and put the chicken pieces in the batter 2 to 3 at a time and shake to cover. Then put them in the baking pan as you would like them to be cooked after being coated. If desired, you can pour any remaining flour over the chicken before cooking. Cook at 375 degrees for 60 minutes turning the chicken over at about 40 minutes to let the other side brown. Enjoy!

    I have also tried this recipe with 1/2 cup Brown Rice Flour and 1/4 cup Bob's Red Mill All Purpose Flour (bean based) with equally great results. If you are unable to eat rice, you would probably be able to replace the Rice Flour with another flour easily.
