    Slow Cooker Herbed Chicken

    1 3-4lb. Whole Chicken
    1 teaspoon dried basil
    1 teaspoon seasoned salt
    1/2 teaspoon pepper
    1/2 teaspoon garlic powder
    2 tablespoons fresh lemon juice
    1 tablespoon cf butter, melted

    Recipe

    Place chicken in slow cooker. Mix seasonings; sprinkle 1 teaspoon mixture into chicken cavity. Sprinkle remaining seasonings over chicken. Drizzle with lemon juice and butter. Place lid on slow cooker.

    Cook on LOW for 5 to 6 hours OR on HIGH for 3 to 4 hours or until meat thermometer inserted into thickest part of chicken thigh and not touching bone reads 180 degrees F.

    Carefully remove lid to allow steam to escape. Place chicken on a platter to slice and serve.

    The only thing I changed was not using the slow cooker liners as suggested in the original recipe. They are just so expensive for so few and I am unsure how safe the plastic is considering all the concern over some chemicals plastic can give off (BPA being one).

    We have done this recipe several times and the kids gobble the chicken up each time so I would say it is a hit especially considering how my kids don't like to eat meat unless it is in a casserole or mixture of some sort but they will eat this. I usually serve it with mashed potatoes and then some freshly sliced apples.
