    Ruby's Favorite Apple Crisp

    List of Ingredients

    3.5 pounds Apples (any variety) cut in to wedges
    1 Tbls cinnamon
    1/2 cup quick oats (use certified GF oats or sub Quinoa or Poa Flakes)See Note from BL Below
    1/2 cup GFCF all purpose flour (we have used both Bob's and Bette Hagman's)
    1/2 cup Brown Sugar (we use one with Molasses)
    1/4 tsp cinnamon
    1/8 tsp each baking soda and baking powder (be sure it's gf baking powder)
    1/4 cup melted GFCFSF margarine

    Recipe

    Pre heat oven to 350 degrees.

    In a bowl combine Apples and cinnamon.

    Pour in to an 8X8 greased pan.

    Combine the rest of in same bowl use for apples.

    Spoon mixture on top of apples.

    Bake for 45 minutes.

    Recipe can be doubled or tripled with ease.

    Note from BL: If one uses gf oats, they won't be quick oats though. You can make them quick oats (technically rolled oats which have been broken to absorb water more quickly) by processing them in your food processor or blender on pulse. Be careful or you will have oat flour though :-D

    The same is true of quinoa, buckwheat and poha flakes (especially thick cut poha). Pulse them first or you will have un- or under-cooked flakes in recipes calling for quick cook oats.
