    Coffee Can Ice Cream

    This recipe can be made in an ice cream maker, however if you do not have one the coffee can method works well.

    List of Ingredients




    1 lb. coffee can and lid, emptied and cleaned
    3 lb. coffee can and lid, emptied and cleaned
    1 cup milk free non dairy creamer
    1 cup soy milk or alternative
    1/2 cup sugar
    1/2 teaspoon vanilla extract
    crushed ice
    1 cup rock salt divided

    Recipe



    Put all ingredients except ice and rock salt in smaller coffee can. Cover
    with lid, Place smaller can inside the larger can. Pack crushed ice around the
    outside of smaller can. Pour at least 3/4 cup rock salt over ice evenly. Cover
    the can and tape lid securely. ROll back and forth on a table for 15 minutes.
    Open the outer can and remove inner can. Remove lid. Scrape the ice cream off
    the sides of the can and stir the mixture to an even consistency. Replace lid.
    Drain ice water from larger can. Insert smaller can and pack with more ice and
    salt. Roll back and forth 15 minutes or until can frosts over. Stir and serve.
    Immediately free unused ice cream.
