Pumpkin Pancakes

List of Ingredients
� cup rice flour
� cup pecan meal
1 � Tablespoons of brown sugar (I leave this out and we still like them.)
1 teaspoon baking powder
� teaspoon baking soda
� teaspoon allspice
� teaspoon cinnamon
� teaspoon ginger
� teaspoon salt
Wet Ingredients
1 cup gfcf milk
� cup pumpkin (When I open a can of pumpkin, I freeze the leftover in � cup
portions.)
1 egg
1 T. oil
1 T. lemon juice or apple cider vinegar.Recipe
Mix the wet ingredients and mix the dry ingredients in a separate bowl.
Spray cast iron pan with gfcf pan spray and fry.
