    Recipe Introduction

I got this idea from Taste of Home 12/2009. I did adjust the recipe to make more than the original stated ( which was only 2 cups) since I was feeding a larger crowd. These were delicious and great for nibbling. I am thinking of adding these to my "Christmas list of food items to give" list. The funny thing was at one point in the evening I saw my 14 year old niece just take the whole bowl to eat them in another room by herself! Lori Bakes

    List of Ingredients

    2 egg whites
    6 cups unblanched almonds
    4 teaspoons canola oil
    2/3 cup sugar
    1-1/4 teaspoon cayenne pepper
    1 teaspoon salt
    1 teaspoon ground coriander
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground allspice

    Recipe

In a large bowl, beat egg white until frothy. Add almonds and oil; stir gently to coat. Combine the remaining ingredients; add to egg white mixture and gently stir to coat. Spread into a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 300 for 18-22 minutes or until lightly browned, stirring once. Cool completely to allow coating to crystalize. Store in an airtight container. Yield: 6 cups.
