List of Ingredients
1 medium cabbage sliced in 1" strips (you can use both red and green, if you like)
1 large sweet onion sliced thin in rings
1/4 lb gluten-free/nitrate-free bacon cut into 1/2 strips
1/2 to 1 lb cooked gluten-free/nitrate-free sausages (or hot dogs) sliced
3-4 red or white potatoes cut in 1" cubes and steamed until semi-soft
Recipe
In a very large skillet or Dutch oven:
Saute' 1/4 lb GF bacon in 2 tablespoon oil until crispy.
Add GF sausage slices and cook until browned.
Add 1 large sweet onion; saute' until translucent.
Add pre-cooked potatoes and cook with lid on for a couple minutes to get the flavor infused, then toss in sliced cabbage and put the lid on, adding 2 Tbls water to help steam the cabbage.
Allow to simmer, stirring and checking every couple of minutes, but put lid back on until cabbage is tender. (Don�t' overcook!)
Note: The sweet onion caramelizes and makes the dish slightly sweet. For SCD, omit potatoes.
