List of Ingredients
1 package beef stew meat, trimmed of excess fat
3 Tblspns olive oil (to saute beef)
1 large onion, diced
2 large stalks celery, chopped
2 large carrots, chopped into coins
2 tspns minced garlic (I buy jars of pre-minced garlic)
1 can red kidney beans, drained
1 can garbanzo beans, drained
1 can corn
1 quart tomatoes (home canned is fine)
1 pint tomato sauce (home canned is fine)
1 tblspn Italian seasoning
1 tblspn dried basil leaves
1 tblspn dried oregano
Salt to taste
Cover with water, but don't make it watery. Use beef bouillion, if desired. Recipe
I simmer on stovetop most of the day, and sometimes add a crushed chile tepin. Recipe is easily doubled. Can also add chopped cabbage if desired.
