    Potatoes and Beans in Vinaigrette


    List of Ingredients


    • 1 lg clove of garlic, crushed
    • 1/4 teas. salt
    • 1/8 teas. freshly ground pepper
    • 3/4 cup olive oil
    • 1 Tbs lemon juice
    • 2 Tbs water
    • 1 Tbs Dijon mustard
    • 1 lb fresh green beans tipped and cut and blanched
    • 1 med. to large red onion thinly sliced
    • 1 1/2 to 2 lbs small red potatoes, cooked, cut in half or thirds/ leave skin on


    Instructions


    1. Mix first 7 ingredients in a jar and shake well. Pour this over remaining ingredients and toss to coat well.
    2. Refrigerate 2-3 hours before serving.
