    List of Ingredients


    • 10 c. cucumbers
    • 2 c. green peppers (approx. 6 large)
    • 2 onions, medium
    • 4 c. celery
    • 4 tbsp. salt
    • 4 c. vinegar
    • 2 c. water
    • 4 c. sugar
    • 1/2 tsp. tumeric
    • 2 tbsp. mustard seed


    Instructions


    1. Put cucumbers, green peppers, onion and celery through grinder. Cover with 4 tbsp salt. Let stand overnight.
    2. Drain well. Boil in 2 c. vinegar and water for 10 minutes. Drain.
    3. Boil 2 c. vinegar, sugar, tumeric and mustard seed. Add relish. Bring to a boil.
    4. Seal in sterilized jars.


    Final Comments


    Makes 3 1/4 quarts or 6 1/2 pints.
