    Zucchini Casserole

    List of Ingredients


    • 2# zucchini, cleaned and cut in thick slices
    • 1/2# bulk sausage
    • 1/4 c. onion, finely chopped
    • 1/2 c. cracker crumbs, finely crushed
    • 2 eggs slightly beaten
    • 1/4 tsp.ground thyme
    • 1/2 tsp. salt
    • 1/2 c. grated cheese or grated Parmesan


    Instructions


    1. Heat oven to 350 degrees.
    2. Cook zucchini in a small amount of boiling salted water, for 10 minutes. Drain and chop coarsely.
    3. Brown sausage and onion. Drain off fat. Grease a shallow casserole dish with a little fat.
    4. Combine zucchini, sausage and onion mixture, cracker crumbs, eggs, thyme, salt and 1/4 c. cheese.
    5. Put mixture in prepared casserole dish. Sprinkle remaining cheese over top and bake for 30-40 minutes.
    6. 4 Servings
