Zucchini Casserole

List of Ingredients
- 2# zucchini, cleaned and cut in thick slices
- 1/2# bulk sausage
- 1/4 c. onion, finely chopped
- 1/2 c. cracker crumbs, finely crushed
- 2 eggs slightly beaten
- 1/4 tsp.ground thyme
- 1/2 tsp. salt
- 1/2 c. grated cheese or grated Parmesan
Instructions
- Heat oven to 350 degrees.
- Cook zucchini in a small amount of boiling salted water, for 10 minutes. Drain and chop coarsely.
- Brown sausage and onion. Drain off fat. Grease a shallow casserole dish with a little fat.
- Combine zucchini, sausage and onion mixture, cracker crumbs, eggs, thyme, salt and 1/4 c. cheese.
- Put mixture in prepared casserole dish. Sprinkle remaining cheese over top and bake for 30-40 minutes.
- 4 Servings
