    Country Chicken Noodle Soup

    List of Ingredients


    • 5 lb. chicken, cut in pieces
    • 12 c. water
    • 4 celery stalks, diced
    • 4 carrots, pared, diced
    • 2 medium onions, diced
    • 1c. tomatoes, peeled, seeded, diced
    • 1T. salt
    • 1 bay leaf
    • 2c. flat egg noodles


    Instructions


    1. Place chicken in a large pot or dutch oven. Cover with water, add celery, carrots and onions.
    2. Bring to a boil, reduce heat and simmer covered, for 8 hours.
    3. Remove chicken pieces and clean all meat from them. Discard bones, dice the meat and return to the soup.
    4. Add the remaining ingredients. Bring to a boil, reduce heat and simmer for 15 minutes longer.
    5. Discard the bay leaf. Serve soup very hot.
