Country Chicken Noodle Soup

List of Ingredients
- 5 lb. chicken, cut in pieces
- 12 c. water
- 4 celery stalks, diced
- 4 carrots, pared, diced
- 2 medium onions, diced
- 1c. tomatoes, peeled, seeded, diced
- 1T. salt
- 1 bay leaf
- 2c. flat egg noodles
Instructions
- Place chicken in a large pot or dutch oven. Cover with water, add celery, carrots and onions.
- Bring to a boil, reduce heat and simmer covered, for 8 hours.
- Remove chicken pieces and clean all meat from them. Discard bones, dice the meat and return to the soup.
- Add the remaining ingredients. Bring to a boil, reduce heat and simmer for 15 minutes longer.
- Discard the bay leaf. Serve soup very hot.
