    Santa Fe Chicken Stew

    List of Ingredients


    • 1T. oil
    • 1 1/2 lb. skinless, boneless chicken thighs
    • 1 med. onion, thinly sliced
    • 2 garlic cloves, minced
    • 2T. chili powder
    • 1 (14 1/2 oz) can stewed tomatoes
    • 1 (15 oz) can black beans or pinto beans, rinsed and drained
    • 1/3c. chopped fresh cilantro
    • 1/2t. salt
    • 1/2t. black pepper


    Instructions


    1. In a large skillet, warm the oil over medium high heat. Add the chicken and saute until browned, about 6 mins.
    2. Reduce the heat to medium, stir in the onion, garlic, and chili powder, and cook, stirring frequently, until the onion is softened, about 3 minutes.
    3. Add the tomatoes and beans. Simmer, stirring occasionally, until chicken is cooked through and juices have thickened, about 10 minutes.
    4. Stir in the cilantro and season with salt and pepper.
