    Recipe Introduction


    Position a rack in the lower third of the oven. Preheat the oven to 350F. Grease an 8 � x 4 � inch loaf pan.

    List of Ingredients





    Whisk together thoroughly:
    2 1/4 c. ww pastry flour
    2 1/2 tsp. dried rosemary
    1/2 tsp salt
    Whisk together in a large bowl:
    2 lg eggs
    1/4 c. olive oil
    1 c. milk


    Recipe



    Add the flour mixture and fold until three-quarters of the dry ingredients are moistened. Add:
    1/3 c. finely chopped walnuts
    1/3 c. chopped, pitted imported olives
    Fold just until the pieces are distributed and dry ingredients are moistened; the batter will be stiff. Bake until a toothpick in the center comes out clean, 40-45 minutes. Let cool in pan 5-10 minutes, then unmold to cooling rack.
