    Spaghetti with Peas Pancetta and Mint

    1/2 pound spaghetti or linguine
    1 tablespoon olive oil
    2 cloves garlic, peeled
    2 ounces pancetta, cubed
    3/4 cup peas, defrosted if frozen
    Hot red pepper flakes or black pepper, to taste
    4 tablespoons chopped fresh mint
    4 tablespoons grated pecorino or Parmesan cheese

    In large pot of boiling salted water, cook spaghetti according to package directions.

    In skillet over medium heat, heat oil. Add whole garlic cloves and remove when toasty brown on both sides. Add pancetta, fry a few minutes, and then add peas. Take care if using frozen peas as oil may spit alarmingly when peas hit pan. Add red pepper flakes or black pepper and fry gently several minutes until pasta is ready.

    When pasta is cooked and pancetta is crispy, toss it all together with mint and add cheese. Makes 2 servings.
