scratch - Caramel Cake
for the cake:
1 cup butter
1/2 cup shortening
3 cups white granulated sugar
6 eggs
1 cup milk
3 cups sifted flour
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
for the frosting:
1 cup whipping cream, (1/2 pint)
3 cups +1 cup white granulated sugar, separated
Preheat oven to 325 degrees F.
Grease well a 9 inch round baking pan.
for the cake:
Cream the butter, shortening, and sugar together until fluffy.
Add the eggs, one at a time, beating well after each addition.
Add the flour, salt and milk until combined.
Stir in the vanilla and lemon extract until combined.
Pour into the baking pan.
Bake for 25 to 30 minutes.
for the frosting:
Mix the 3 cups of sugar and whipping cream together in a saucepan.
Cook until the sugar is melted.
Sprinkle the other cup of sugar in a heavy frying pan and brown.
Pour the browned sugar into the creamy mixture while it is
still hot.
Beat together until cool.
Spread on cooled cake.
