    Crockpot - Beef Bourguignon

    List of Ingredients

    1 lb. bacon
    3 lbs. cubed beef
    flour
    1 bottle red wine (at least quart size)
    1 lb. chopped onion
    1 lb. chopped celery
    1 lb. chopped carrots
    2 cloves chopped garlic
    chopped shallots, optional
    1 bay leaf
    salt and pepper


    Recipe

    Slow cook bacon in a large baking pan. Remove bacon to crockpot and save bacon grease to a skillet.
    Dredge beef cubes in flour and then brown in the bacon grease. Transfer meat to crockpot.
    Saute vegetables and garlic in bacon grease. Remove to crockpot.
    Pour 1/2 bottle of wine into crockpot and gently mix. Add the bay leaf. Salt and pepper to taste.
    Cook on low 8 - 10 hours.
