    Baked Fish with Tarragon Stuffing

    List of Ingredients

    1/2 c. chopped celery
    1/2 c. chopped onion
    1/3 c. + 2 tbsp. I Can't Believe It's Not Butter light
    1/2 tsp. salt
    1/2 tsp. dried whole tarragon
    1/8 tsp. ground black pepper
    3 c. soft bread crumbs
    3 tbsp. milk
    6 8oz. fish fillets

    Recipe

    Preheat oven to 400. Coat a 13x9x2" baking dish with cooking spray.
    Saute the celery and onion in the 1/3 c. butter light until tender.
    Add the salt, tarragon, and pepper and mix well.
    Stir in the bread crumbs and milk.
    Place 3 of the fillets in the baking dish.
    Spoon the bread crumb stuffing mixture over the fillets.
    Top with the remaining fillets.
    Melt the 2 tbsp. butter light and then brush the tops of the fillets.
    Bake for about 35 minutes or until the fish flakes easily when tested with a fork.
    Makes 6 - 8 servings.
