    Salmon Steaks, flanked

    Salmon Steaks, flanked

    4 salmon steaks
    1 lemon, cut in wedges
    1/8 tsp. garlic salt
    parsley
    2 tbsp. butter, melted
    fresh mashed potatoes

    Cut four pieces of aluminum foil about the size of the salmon.
    Place 2 slices of lemon and a piece of foil under each salmon steak.
    Brush the salmon with butter and season with the garlic salt.
    Broil 4" from the broiler for about 10 minutes.
    There is no need to turn the salmon.
    Arrange the salmon on a plank or heat proof platter.
    Mound fluffy mashed potatoes around the salmon.
    Place under broiler just long enough to brown the potatoes.
    Garnish with parsley and lemon wedges.
    Makes 4 servings.
