    Grilled Marinated Shrimp Kabobs

    List of Ingredients

    1/3 c. lemon juice
    1 tbsp. dry ground mustard
    1 tbsp. vegetable oil
    1 tsp. ground cumin
    1/2 tsp. ground coriander
    1/2 tsp. salt
    1/8 tsp. ground black pepper
    1/8 tsp. paprika
    1 1/2 lbs. fresh (peeled + deveined )
    ...or frozen (thawed) uncooked large shrimp
    2 limes
    1 med. mango, cut into 1" pieces, if desired
    1 large onion
    whole cherry tomatoes, if desired
    6 - 8 metal or wooden skewers,
    ...(if using the wooden, be sure to soak in water for 30 minutes before using)

    Recipe

    Mix together the lemon juice, mustard, oil, cumin, coriander, salt, pepper and paprika in a shallow resealable container.
    Add the shrimp and toss lightly to coat with the marinade.
    Place the cover on and seal. Then refrigerate, giving an occasionally shake, for 1 hour but no longer than 4 hours.
    Get your grill ready for a medium heat, with the rack 5 - 6" from the heat.
    Remove the shrimp from the marinade, reserving the marinade.
    Cut the limes into 1/2" slices, then into 1/4's.
    Do the same with the onion.
    Place the shrimp, lime, onion, tomato and mango alternately on each of the skewers, leaving a little space between each piece.
    Cover with foil and grill kabobs for about 10 minutes, until the shrimp are pink and firm. Be sure to turn and brush 2 or 3 times, with the marinade, during the cooking.
    Discard any remaining marinade.
    Garnish with lime wedges, if desired.
    Makes 6 - 8 servings.
