    Salmon With Jollypopper Sauce

    Recipe Introduction

    This is sauce is GREAT on everything!! Can be served over chicken, pasta, veggies or use it to make pasta salad.

    List of Ingredients

    Buy a large salmon and marinate it in orange juice concentrate for a day.
    Then cook it covered with lemons and fresh dill.
    (You can steam, microwave or bake it, they all work well.)
    Lay it down on a bed of fresh lemons and dill when it is firm and pink.

    On the side, for pouring make this cold sauce.
    for the Jollypopper sauce:

    1/3 c. cider vinegar
    2 tbsp. Dijon mustard
    1/2 c. tightly packed fresh basil
    2 large cloves of garlic
    1/3 c. oil (olive, veggie, canola)
    1 c. sour cream (or plain, nonfat yogurt)
    1/2 c. heavy whipping cream (or evaporated skim milk)
    3 tbsp. chopped parsley
    salt, pepper and sugar to taste
    (A generous pinch of sugar perfects the recipe!)

    Recipe

    for the Jollypopper sauce:

    Combine the vinegar, mustard, basil and garlic in a blender/food processor.
    While it is on, very slowly drizzle in the oil.
    Add the sour cream, heavy cream and parsley and puree until smooth.
    Season to taste.
    Refrigerate to firm up. Stir before serving.
    Makes 2 1/2 c.
