    Yellow Curried Shrimp

    2 Tablespoons vegetable oil
    1 medium onion, chopped
    1 Tablespoons minced garlic
    1 Tablespoon freshly minced ginger
    1 Tablespoon, or more, yellow curry powder
    1/2 teaspoon red pepper flakes
    1 cup coconut milk
    1 1/2 pounds peeled medium sized shrimp
    1 Tablespoon a Thai fish sauce
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    2 cups cooked basmati or jasmine rice
    freshly chopped cilantro for garnish

    Saute onions, garlic and ginger togehter until soft.
    Add curry and pepper and cook for a minute.
    Add coconut milk and cook for 5 - 10 minutes, or
    until milk is reduced by 1/2.
    Add water if too thick.
    Add fish sauce, shrimp, salt and pepper. Cook about
    5 more minutes until shrimp is pink.
    Serve over rice and garnish with cilantro.
    Serves 4.

    Note:
    Scallops may be substituted for 1/2 or all the shrimp.
