    Lamb - Shepherd's Pie

    2 cups fresh or frozen chopped onions (2 medium-large yellow onions)
    1, 8 ounce package fresh shredded carrots
    1 large bay leaf, crumbled
    1/2 teaspoon dried thyme
    2 1/2 tablespoons + 1/2 tablespoon bacon drippings, melted butter, or
    vegetable oil
    1 pound lean ground lamb shoulder or lean ground beef chuck
    1 cup frozen green peas, unthawed
    4 cups frozen hash brown potatoes, unthawed
    1, 10 1/2 ounce can beef consomme
    5 tablespoons
    1 tablespoon Worcestershire sauce
    1 tablespoon steak sauce
    1 teaspoon salt
    1/2 teaspoon freshly ground black pepper

    Mix the beef consomme with the flour.
    Then add the Worcestershire and steak sauces, 1/2 tablespoon of drippings,
    salt and pepper.
    Set aside.
    Preheat oven to 450 degrees.
    You will need a 2 1/2 quart shallow microwave to oven proof casserole dish.
    Place the onions, carrots, bay leaf, thyme, 1 1/2 tablespoons of drippings
    in the dish and toss.
    Add the lamb and frozen peas, and toss again.
    Sprinkle the top with frozen hash browns.
    Cover and microwave on high for 15 minutes. Uncover.
    Pour consomme mixture evenly over top of the potatoes.
    Drizzle with remaining 1 tablespoon of the drippings.
    Place in the oven and bake, uncovered, for 25 - 30 minutes, or until bubbly
    and potatoes are browned.
    Serve immediately.
