Lamb - Lamb Shanks + Lentils

List of Ingredients
6 medium lamb shanks, (about 8 ounces each)
2 tablespoons Olive oil
1/2 cup + 3 cups water, separated
2 teaspoons minced garlic
1/2 teaspoon + 1 1/2 teaspoons salt, separated
1/2 teaspoon dried oregano
pepper to taste
1 1/2 cups lentils
1 small onion
3 whole cloves
1/2 cup chopped celery
1 bay leaf
6 thin lemon slices
Recipe
Preheat oven to 350 - 375. Grease a baking dish.
Brown the lamb in a large skillet, in the oil.
Add the 1/2 c. water, garlic, the 1/2 tsp. salt, oregano and pepper.
Cover and cook over a low heat for one hour, or until the lamb is tender.
Make the sauce while the lamb is cooking.
Stuff the onion with the cloves and set aside.
Rinse the lentils and drain.
Combine in a medium saucepan, the lentils, the 3 c. of water, the stuffed onion, celery, bay leaf and the 1 1/2 tsp. of salt.
Simmer, for 50 - 60 minutes, uncovered, or until the vegetables are tender.
Pour the sauce mixture into the baking dish.
Top with the meat and lemon slices.
Cover lightly and bake for 20 - 25 minutes, or until the liquid is absorbed and the lentils are tender.
Discard the onion and bay leaf, then serve.
Makes 4 servings.
