Lamb - Roasted Leg of Lamb w/Potatoes

Serve with any other vegetable you like and a salad.
List of Ingredients
1, 8 pound leg of lamb
Olive oil
4 cloves garlic
lemon juice
potatoes
Recipe
Trim leg of all fat.
Put slivers of 1 clove of garlic into the lamb.
Heavily coat with olive oil.
Lay in roasting pan.
Use 2 cloves of garlic and sprinkle on top of lamb.
Spritz a bit of lemon juice over that.
Sprinkle on the oregano.
Cook in a 325 oven for 2 1/2 - 3 hours, until just about well done, but not pink.
Lay the potatoes around the leg of lamb.
Sprinkle with the other clove of garlic and a spritz of lemon juice.
Let bake until the potatoes are done.
Leg of lamb should be a bit crispy on the outside.
