Lamb - Tasty Roast Lamb

1, 5 pound lamb roast, trimmed of fat
5 cloves of garlic, cut into 1/4's
1/4 cup lemon juice
2 tablespoons dried oregano
1/2 cup white wine
Recipe
Preheat oven to 350. Coat the roasting pan with non stick cooking spray.
Wipe the roast well with a damp paper towel.
Use a very sharp, small knife to cut about 20 slices into the roast.
Insert one of the pieces of garlic into each slice.
Mix the lemon juice and oregano together, and rub it over the lamb.
Place the lamb in a roasting pan and pour the wine into the pan around the lamb.
Cook, uncovered, until done, for about 1 1/2 hours, basting every 20 minutes with the pan juices.
Let stand for 15 minutes before carving.
Serves 8.
