    Recipe Introduction


    Lemon curd is a traditional spread used on scones, muffins etc. It's also great to spread it on shortbread, or use as a pie filling.
    A lighter filling can be made by adding whipping cream to the mixture (twice the whipping cream to lemon curd).


    List of Ingredients


    • 3/4 cup castor sugar
    • 1 tablespoon grated lemon rind (or more)
    • 2 large eggs
    • 2/3 cup fresh lemon juice
    • 2 tablespoons butter


    Instructions


    1. Combine sugar, lemon rind and eggs in a saucepan over a medium heat, stiring with a whisk. Cook until sugar dissolves (about 3 minutes).
    2. Stir in lemon juice and butter. Cook for about 5 minutes. Cover and chill.


    Final Comments


    Cold lemons are easier to grate. Room temperature lemons provide more juice.
