    Frozen Christmas Pudding

    List of Ingredients


    • 1/2 cup sultanas
    • 1/2 cup currants
    • 1/4 cup glace cherries
    • 1/4 cup mixed fruit peel
    • 1/4 cup brandy or fruit juice
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 1/2 cup blanched almonds
    • 1/2 cup cream
    • vanilla or chocolate icecream


    Instructions


    1. Combine fruit, liquid and spices (all ingredients except almonds, cream and icecream. Stand at least 24 hours to allow flavours to mix.
    2. Remove icecream from freezer and let it sit to soften slightly.
    3. Mix together fruit, almonds, cream and icecream.
    4. Place in a large mould (preferably a Christmas pudding shape). Cover top with foil.
    5. Freeze until firm.
    6. To serve, quickly dip in hot water and remove from mould.
    7. To decorate at Christmas time, place plastic holly on top of the icecream pudding.
