    Bethie's Chunky Pasta Sauce

    I got tired of eating the same old pasta sauce all the time (if you're family, you will know to what I am referring) and so I came up with this recipe as a change of pace. However, it's never really the same twice, because I don't measure things!

    List of Ingredients




    1 small onion, small dice
    2 teaspoons minced garlic
    2 tablespoons olive oil
    1 (28 oz) can crushed tomatoes in puree
    1 (28 oz) can diced tomatoes
    Salt and Pepper, to taste
    1/4 teaspoon crushed red pepper
    1 tablespoon (or more) oregano
    2 teaspoons (or more) basil
    1 pound ground turkey or beef

    Recipe



    Heat olive oil in heavy skillet. I use an enamel covered cast iron pot. Saute onion until translucent, add garlic and saute quickly, stirring often to keep garlic from burning. Add spices, and stir around just to release aroma. Quickly add tomatoes and stir. Cover and let simmer for about thirty minutes.

    In a separate skillet, brown turkey or beef, draining any fat. Add to sauce, put cover on pot and let simmer for another ten minutes.

    Serve over your favorite pasta with a big basket of garlicky rolls!
