    3 C. RAW, WASHED AND DRIED SPINACH
    4 SLICES BACON
    2 TBSP. APPLE CIDER VINEGAR
    2 TBSP. WATER
    1 TBSP. SUGAR
    1 EGG, BEATEN

    Recipe



    CUT BACON IN PIECES AND FRY UNTIL CRISP. REMOVE FROM PAN. ADD VINEGAR, WATER AND SUGAR TO FRY PAN. MEANWHILE, BEAT EGG. ONCE INGREDIENTS BEGIN TO BOIL REMOVE FROM BURNER ADD 1/4 OF EGG MIXTURE, BEAT WITH WHISK CONSTANTLY, ADD REST OF EGG AND CONTINUE BEATING. RETURN TO BURNER AND COOK UNTIL THICKENED. ADD BACON. POUR OVER SALAD AND TOSS.
