Arlene’s Potato Leek Soup

List of Ingredients
- 4 cups chicken broth, NSA
- 2 cups water
- 4 medium potatoes, peeled and cut into small pieces
- 2 large yellow onions, chopped
- 6 leeks, well washed and chopped
- 1 tsp oregano, dried
- 3 TBSP fresh parsley, finely chopped
- 1 – 2 TBSP Balsamic vinegar
Instructions
- Bring the chicken broth and water to a simmer in a large saucepan.
- Add the potatoes, onions, and leeks.
- Cover and simmer over a low heat for 20 minutes to 1/2 hour.
- Use a potato masher, mash the potatoes in the broth until it becomes a coarsely texttured soup.
- Add the oregano, parsley, and vinegar, and simmer for an additional 5 minutes or so.
