    These treats are loaded with fresh apple and sprinkled with crunchy streusel.

    List of Ingredients




    � 1 cup shortening or butter

    � � cup brown sugar

    � � cup powdered sugar

    � 2 teaspoons vanilla extract

    � � teaspoon salt

    � � teaspoon pumpkin pie spice

    � � teaspoon cinnamon

    � 1 large egg plus 2 egg yolks

    � 1 tablespoon baking powder

    � 2 � cups all-purpose flour

    � 3 medium apples, peeled, cored and finely diced


    STREUSEL

    � 1 � cups rolled oats

    � 2 teaspoons granulated sugar

    � 2 teaspoons brown sugar

    � � teaspoon cinnamon

    � � teaspoon pumpkin pie spice

    � 4 � tablespoons melted butter

    � � cup jarred caramel sundae sauce (optional)


    Recipe



    Line 2 baking sheets with parchment paper or lightly coat with baking spray.

    In a large bowl use an electric mixer to beat the shortening, both sugars, vanilla, salt, pumpkin pie spice and cinnamon until fluffy. Beat in the egg and yolks, scraping the bowl as needed. Beat in the baking powder and flour, scraping the bowl again. Mix in the apples. Refrigerate dough for 30 minutes.

    Heat the oven to 375 degrees and make the streusel: In a food processor, pulse the oats, both sugars, cinnamon and pumpkin pie spice 2 or 3 times, to just chop the oats. Drizzle in the butter, then pulse 1 or 2 times to just mix. Set aside.

    Drop 1-tablespoon balls of chilled dough on the prepared pans, leaving about 2 inches between them. Use your fingers to slightly flatten each cookie; they may be sticky. Carefully sprinkle streusel over each cookie.

    Bake for 13 to 15 minutes, and transfer to a wire rack to cool. (Let the baking sheets cool between batches.) Just before serving, drizzle each cookie with caramel sauce.

    Makes 42 cookies.
