    MILD CHICKEN AND COCONUT CURRIED PUREE

    List of Ingredients




    1/2 cup cooked (grilled) skinned chicken
    1 small onion
    1 medium carrot
    1 small potato
    1 tbsp tomato puree
    1 tbsp olive oil
    pinch of ginger/cumin/tumeric and coriander
    2 tsp of desicated coconut

    Recipe



    Peel and chop 1 small onion and fry with the oil and puree.
    Peel, finely dice and add the carrot, potato and chicken.
    Add the ginger,cumin, turmeric, coriander and the coconut, mix in well and allow to cook for a couple of minutes.
    Add 4 tbsp of water. (if you want a more creamy mix add 1/2 milk)
    bring to the boil and simmer for 20 minutes or until mix is soft.

    Puree roughly or max

    extra water can be added if required to thin mixture
