    List of Ingredients




    � mango
    1 egg
    110g/4oz self-raising flour
    55g/2oz soft brown sugar
    55g/2oz butter
    100ml/3�fl oz milk
    1 tsp baking powder
    � red chilli, seeds removed and chopped
    pinch cinnamon
    butter, to grease the tin
    icing sugar, to dust
    3 tbsp honey
    150ml/5fl oz double cream

    Recipe



    1. Peel the mango and cut into cubes.
    2. Add to a food processor and blend until smooth.
    3. Add the egg, baking powder, self-raising flour, sugar, cinnamon, chilli, milk and butter and blend until well mixed.
    4. Grease a muffin tin with the butter.
    5. Pour in the muffin mixture.
    6. Bake in the oven for 10 to 15 minutes.
    7. Remove from the oven and dust with icing sugar, drizzle with honey and double cream.

    Makes 6.
