    List of Ingredients




    1 tbsp. oil
    1 onion, peeled and chopped
    2-3 garlic cloves, peeled and minced
    1 green pepper, seeded and chopped
    6 c. of water
    1 8-ounce can of tomato paste
    2 bay leaves
    1 tsp. cayenne pepper or more, to taste
    thyme, to taste
    pinch of seasoned salt
    ground black pepper to taste
    2 15-ounce cans red beans, rinsed and drained
    1 pound enriched long-grain white rice (2 cups) or brown rice
    scallions or parsley for garnish

    Recipe



    1. Heat the oil in a 4-quart saucepan. Add the chopped onion, garlic, and green pepper and cook over medium heat for a few minutes.

    2. Add the rest of the ingredients, stirring to mix in the tomato paste.

    Bring to a boil, then turn down to low heat and cook covered for 20 minutes.

    3. Remove bay leaves.

    4. Serve over white or brown rice.

    5. Garnish with scallions or parsley.

    Makes 10 cups (serves 6-8)
