    List of Ingredients




    3 lbs. cubed beef chuck roast
    1 32 oz. can crushed tomatoes
    1 6 oz. can tomato paste
    1 large yellow onion, diced
    4 stalks celery, diced
    1 large sweet bell pepper, diced
    4 fresh habanero chiles*, diced
    2 12 oz. bottles of beer
    2 10.5 oz. cans of beef stock
    2 32 oz. cans black beans
    2 bay leaves
    1 jar Red Lion Spicy Foods Serrano Red & Black Salsa
    1 package Red Lion Spicy Foods Zany Chili Mix
    *Wear rubber gloves when handling the chiles.

    Recipe



    Brown the beef in a large pot. Drain off fat, reserving one tablespoon.
    Put reserved fat back into pot, and add vegetables and beef. Cook until the vegetables are tender, about 5 minutes.
    Add remaining ingredients, except black beans. Bring to a boil, reduce heat and simmer for two hours.
    Drain the beans, and add to the pot. Simmer an additional hour.
    Makes about 14 cups and freezes very well.
