Black Pan Chili

List of Ingredients
500 Grams Pork/Beef cubed with fat trimmed off
2 Large Onions, chopped
8 Cloves Garlic, chopped
2 Habanero Chiles, chopped fine
1 Tablespoon Cumin
3 Tablespoons New Mex Red Chile Powder
1 Tablespoon Chipotle Powder
1 Tablespoon Oregano, mexican is best
1/2 Tablespoon Epazote (optional)
1/3 Cup Wholemeal Flour
2 Pints Chicken Stock, not too strong or it will be salty when reduced
3 Tablespoons Tomato Pur�e
2 1/2 Cups Black Turtle Beans, cooked.
Recipe
Fry onions, garlic and habaneros in oil until starting to brown. Add the pork/Beef and cook until it is sealed. Put all the spices and herbs into mixture and cook for a few minutes, take care it does not catch. Add the tomato pur�e, half of the stock and stir in the flour.
Pour in the rest of the stock cover and cook on a low heat, stirring frequently, for at least three hours till meat is done and the sauce goes a very dark brown.
Half an hour before it is cooked add the black beans.
Serve it up in a bowl with cornbread.
